This cozy B&B lodge is a great choice for a special event

Just six miles west of Colorado Springs sits the mountain town of Cascade, CO. Also in Cascade is the rustic, yet elegant America’s Rocky Mountain Lodge B&B. Sausage-Egg Frittata
Serves 8

32 oz. bag frozen O’Brien Potatoes
1 roll (1 lb) sage flavored bulk sausage, cooked
10 hard boiled eggs, chopped
1 can cream of mushroom soup
2/3 soup can milk
3 green onions, chopped
2 cups Colby-Jack cheese, shredded
Salt & Pepper to taste

In 8 16oz. greased ramekins, or a 9×13” greased casserole, layer potatoes, sausage and eggs. Combine soup and milk, then pour over other ingredients. Sprinkle top with cheese. Cover with foil. Bake in a 350? oven 45-55 minutes.

To serve, garnish with green onions, or parsley & a tomato slice.

*This can be prepared the night before and refrigerated until you’re ready to bake it.

Frog Eye Salad
Serves 24

2 (20 oz) cans Pineapple Tidbits, drained (reserve juice)
1 (20 oz) can crushed Pineapple, drained (reserve juice)
3 (11 oz. each) cans Mandarin oranges, drained (juice discarded)

Drain juice from all of the above, reserving the pineapple juice – you will need 1 ¾ cups; set aside.

1 ¾ cups reserved pineapple juice
1 cup sugar
2 Tbsp. flour
2 eggs, beaten
½ tsp. salt
1 Tbsp. lemon juice

Combine flour, sugar and salt in a medium saucepan. Stir in pineapple juice and eggs. Cook over medium heat, stirring frequently, until thickened. Add the lemon juice and cool.

1 pkg. Acini de Pepe Pasta

Prepare Pasta according to package directions. Drain, rinse with cold water, and pour into a large bowl. Add the reserved fruit.

1 (8 oz) container Cool Whip
1 cup miniature marshmallows
1 cup coconut

Combine Pasta, thickened juice mixture, cool whip, marshmallows and coconut. Store in an airtight container.
